  1. Reliable grain flaker and cracker 4 Star Review

    We have used the Campo for 14 months now and are pleased with the results. We use it to crack hard red winter wheat, in dry state, rather than making flakes with soaked wheat.

    We use the Campo to do this because we've found that crushing the wheat in a flaker mill produces a slightly nuttier flavor, which we prefer. There are other tradeoffs, though: running the wheat through the flaker creates flakes of bran that some people might not like to eat. Also, some people will prefer the consistently chunky texture created when you crack wheat between stones or plates, as with the cracked wheat sold by Lehi Roller Mills, or wheat cracked using the Country Living Mill on a wide setting.

    We purchased the Schnitzer Campo Roller Flaker from Country Living as a replacement for the Marga Molino flaker we had used for a few years. The Margo flaker broke in normal use. The Campo is more reliable and easier to use.

    The Campo adjusts with small, partial turns of the knobs on either side. The rollers are mounted on a wood base and will spread out slightly as the grain comes through. The knobs stop this expansion at a fixed point.

    You might not notice a difference visually, but you will notice the difference in the nature of the cracked wheat or the thickness of the rolled flakes.

    The only negatives in operating the flaker for cracking wheat are:

    - The flaker lets a lot of flaked bits of wheat escape out the sides, which makes a mess. We created covers for both sides using pieces cut from manila folders, which we taped over the sides, with slots for the edges of the metal chute. This contains most of the bits that used to escape.

    - It is hard to remove the handle after each use. The handle is designed to stay in place between uses. But we prefer to pack it up and put it away. So we keep a pack of 4 x 6 post it notes in the box. We run the pack up between the rollers backward, and it stops the rollers. Then we can release the handle (which screws on and off). Then we lightly turn the rollers forward again to release the paper, without tightening the handle. A bit of a bother but workable.

    Fix those two issues and this would be an ideal flaker / cracker for small-scale use.
